MONKEY PAELLA

makes quite a bit - (needs a good size paella pan)


½ c. dry white wine
2 t. saffron in ¼ c. water
parsley, chopped
2-3 cloves garlic
1 onion
2 c. tomato, chopped
2 c. spanish rice
1 red bell pepper, 1" wide strips
1 orange bell pepper, 1" wide strips
½ c. artichoke heart
roasted red pepper
peas
2 carrots, julienned
6 c. stock / water

1 chicken
2-3 chorizo sausages
½ - 1 lb. shrimp
1lb. calamari
1 dozen mussels / clams
2 lobster tails

olive oil
salt
paprika


cook/brown sausages & chicken... slice them
saute onions, garlic... tomato...
add carrot, bell peppers... cook a little
add salt, paprika, parsely... add rice, stir to coat
add white wine, saffron... cook slightly
add stock... cook ~10 min
add sausage, chicken, mussels, clams, shrimp, lobster... cook until rice is done
add artichoke, roasted red pepper, peas... rest ~5 min... its done
