A family recipe for blintzes

Crepes

1 cup flour
1 cup milk
¼ t. salt
2 eggs
1 t. oil/butter

blend, put in fridge for >1hr., cook

Sweet Filling

½ cup cottage cheese (ricotta/farmer’s)
13 oz. cream cheese
1 egg
1 t. vanilla
¼ t. cinnamon
¼ cup raisins
3 T. butter

spoon into crepes and sauté in butter until brown

Green Chili Filling

replace some flour in crepes with corn meal

cottage cheese
Shredded cheddar
Canned green chilis
1 egg
